Well some of you may say I’m a sucker for punishment, but after my initial contact with RUBIA @ Chappelli’s a few weeks ago, I thought I’d give these new kids on the block, the benefit of the doubt and give them another go.
This time at the trendy Merino club down at the Windsor end of Chapel St.
Boy was I glad I did!
Not only was the place an aesthetic gem, with funky décor, an eclectic menu, exquisite furniture and a young and vibrant crew on hand and ready to serve, but it seemed that they were a bit more into the whole coffee thing, even bringing me a complimentary glass of water as soon as I sat down.
Now that’s attention to detail, and some good old fashioned service.
Damn! They even knew what a ristretto was. KUDOS!!!
It was actually well presented, short, dark and syrupy. Just the way it should be.
The aroma was intense, the flavor complex, the experience sublime
I followed it up, just to make sure with a long machiato, and boy was it good. I really enjoyed it and savored the entire experience, the floral aroma, the sweet, piquant waltz it danced on my tantalized taste buds.
BRAVO! Gotta give you guys a bean, maybe even two and welcome you to the ranks of the Melbourne Coffee Review.
Isn’t it amazing just what a difference there can be between cafes using the same coffee!






I totaly agree with your review. They make the creamiest lattes I have tasted. They also use bonsoy the best soy milk i have come across.

Yes i do agree,however i noticed the date on your review and i myself was a big fan of the head baristas coffee (a trendy young kiwi bloke)but its definately not the same since a few months now.Got some other guy working the machine now but hes still not managing to texture his milk properly and i havent been back for a while.Back to tusk for me
I would like to say that on Saturday morning i went to Merino cafe to enjoy a lovely breakfast in the sun with my girlfriends ! not only did they get the order wrong but my food was behind my other friends food because the waiter dropped my egg (and didn’t bother to apologise) he just walked off to get me a new one… then we weren’t going to pay for the wrong order (mind u a $6.00 order) therefore not only did we get abuse from the girl waiter who obviously thought customers could never be right but the guy manager behind the bar too wasn’t willing to admit default we were sworn at (his exact words were “i dont have to deal with this f’in shit today”) then as we walked out… he called us F’in Sl*#s !!! i have never been so appalled by the lack of courtesy or people skills in my entire life ! i will be telling every single one of my friends to not eat or drink there ……
