If Carlton is the underbelly, St Kilda is the loin of Melbourne, and we love it. It has some of the most authentic places in Melbourne and Dr Jekyll is right in the thick of it. This is authentic and inspired cafe offers the coffee lover an exceptional coffee experience, with great service and a sublime menu to boot. They choose to offer Syndicate coffee, and they know how to use it. I have visited three times now, and each time I found my coffee to be perfect in temperature and taste. Consistency probably equates to the barista who is the owner and clearly knows his stuff. Welcome to the family.






The Coffee is most definitely a one bean. It is actually pretty lousy have unfortunately been in there twice now and the second was worse than the first.
This place has obviously changed hands since this review. Had a coffee here March 2012 and although the staff are friendly and enthusiastic they cannot make coffee to save themselves. Very fast extraction due to extreme underdosing. As this obviously makes for a weak, flavourless shot, the barista compensates by overextracting (it looked like at least 100ml from where I was) which meant the coffee was bitter. So no real coffee flavour, just bitter acidic compounds. Milk texture very ordinary too. 2 glaring hints that the baristas know little about their job – they left group handles out of the machine when not in use, robbing them of the heat needed for optimal extraction, and they used presets on their machine for pulling shots…..really, in this day and age? Dr Jekyll is no better than Gloria Jeans or the like.
